No-Cook Energy Bars

EnergyBar
This is a nice easy recipe. Sproglet is 11 but a much younger child could make these.

To Make 20 Bars:

  • 2 cups rolled oats
  • ½ cup of protein powder
  • ½ cup of chocolate chips
  • ½ cup of chia seeds
  • ½ cup of sultanas
  • 1 cup of peanut butter
  • ½ cup of coconut milk
  • ¼ cup of honey

Method:

Just bung all the ingredients in a big bowl.

Get your kiddo to thoroughly mix everything together (the mixture is quite stiff so you need an electric whisk).

Put the mixture in a tin lined with greaseproof paper. Flatten out the mixture.

Don’t forget to lick those paddles!

(Sorry if I scared you, Sproglet insisted I should be photographed too!)

Cover with a bit more greaseproof and put it in the fridge for a few hours (this IS the hardest bit!)

After the chilling time take the slab out of the tin and put it on a cutting board. You need to use a pretty sharp knife to cut the bars so make sure you are there to supervise! Get the kiddo to cut it into bar or square shapes. These are quite filling so don’t make them too big!

Now take a picture of your kiddo looking mighty pleased with their plate of goodies!

Enjoy!
