I had a little cauliflower sitting in the veg basket and it needed using.
Now often I would make cauliflower cheese but I don’t know, today I did not want to make cheese sauce.
To Serve 4:
- 1 small cauliflower, cut into florets (don’t throw the stalk, just cut it into chunks)
- 1½ cups of grated cheese
- 2 eggs
- 1 OXO cube (or any other brand of stock cube)
- ½ cup of breadcrumbs
- 2 spring onions (scallions)
- Salt and pepper
Method:
I cut the cauliflower into florets and boiled them for 10 minutes.
Then I put them in my food processor (I have a hand powered one) and cut it till it looked about rice size.
Put it in a bowl add the cheese, eggs and the breadcrumbs and the stock cube.
Season to taste.
Divide the mixture and make about 12 patties.
I fried them in a bit of butter (for the taste) and coconut oil (as this is an healthy oil) till they are a lovely golden brown.
These yummy, scrummy patties are crunchy on the outside and has lovely gooey cheese on the inside.
I served these with a nice mango and lentil salad and some runner beans from the garden.
