Today is soup day, as Granny is with us again.
I had the soup happily bubbling away when I realised I’d totally forgotten to take photos.
So steaming bowls of soup will have to do.
It is my version of minestrone soup, probably nothing like the real thing but it is delicious and filling.
To Serve 5-6:
- 1 medium onion
- 2 red bell peppers
- 3 sticks of celery
- 3 carrots
- 1 small sweet potato (or a normal potato)
- 1 cup of peas
- 1 cup of sweetcorn
- 1 can of baked beans
- 500 ml of passata
- 3 tbs of orzo (or other small pasta shapes
- 2 tubs of stock or stock cubes
- Salt, pepper and red chilli flakes
Chop all the fresh vegetables into similar size chunks about the size of the baked beans.
Put them in a large saucepan add the beans, passata and the stock (tubs or cubes) using the baked bean tin add the water, I used about 3 tins worth of water (just for quantity, I did not measure it in a jug).
Now just simmer it till the veggies are soft.
Season to taste and serve!
