Getting my weekly shopping in I went to the local Morrisons.
In the reduced aisle there were some pretty decent looking baby plum tomatoes.
And they were REALLY cheap! Only 19 p per box…
So I bought 4 of them as well as some special offer pepper and I knew immediately what I was going to make with these beauties!
Roasted tomato and pepper soup!
To Serve 4-5:
- 4 punnets of baby tomatoes
- 3 peppers
- 2 red onions
- 4 cloves of garlic
- Some olive oil
- Salt and pepper
- Stock pots or cubes
Method:
Lightly oil a baking tray – make sure it has sides, as there will be a fair bit of liquid coming from the veggies… and you want to keep it for the soup!
Place the washed tomatoes on the tray with the chopped peppers, onions and garlic cloves.
Sprinkle with olive oil and season with salt and pepper.
Put in the oven to roast (middle shelf – 200 °C / 390 °F).
It took about 30 min but keep an eye, they want to go slightly toasty but NOT burned!
When they are soft and toasty scoop them into your soup pan and pour the liquid in too.
Add water (I added a half liter to start and added more as needed probably about ¾ of a liter in total), some dried oregano and basil and stock cubes and seasoning to taste to taste.
Let it boil gently for 10 min and blend.
Now if you like your soup velvety smooth you need to sieve it now, but we don’t mind the texture so we ate it as it was.
I added a bit of cream… delicious!
