Excitement… Chocolate puddings are about to be made!
We have been trying to eat less sugary treats and less sugary foods altogether so when we found a recipe that was healthy and had little or no refined sugars we had to try it.
Sprog was super excited!
However when he started measuring the ingredients he was not sure of the dates, not sure at all…
But well it had cocoa in so he was willing to give it a go!
He added and mixed all the ingredients and then we had to leave it in the fridge for 3 hours…
Now it contains chia seeds, they swell up and are similar to tapioca in “mouthfeel” Hubby and Sprog were a bit put off by that the first time it was on the menu so they did not want to eat it.
Since then they enjoyed them in bakes and bars so I thought this might be a good time to try again as this pud is whizzed after soaking.
So whilst Sprog was playing some games I went back to the kitchen and whizzed the now soaked pudding and finished it off by putting them in pretty glasses and adding a few decorations.
They were delicious, and no complaints at all about tapioca…

To Serve 4:
- 1½ cups Almond milk or similar
- ⅓ cup chia seeds
- ¼ cup unsweetened cocoa powder
- 9 dates, pitted
- ½ tsp ground cinnamon
- ¼ tsp sea salt
- ½ tsp vanilla extract
Method:
It is so easy to make, so perfect to do with kids.
Just put all the ingredients in a bowl, give it a mix and pop it in the fridge overnight or a minimum of 3 hours (yeah I know, I forget to do stuff in time too… but 3 hours just about does it).
Then when all the liquid has soaked into the seeds whizz it with a stick blender or a food processor.
Give it a taste to see if it is sweet enough and if not add a little maple syrup.
