Sproglet wanted to make pudding today. I had squirreled away a recipe for coconut cake I found from Holistic Health Herbalist.
Serves 10+ Slices:
- 4 eggs
- 1 tsp vanilla essence
- Pinch of salt
- 1 ½ tsp cinnamon
- 1 cup coconut cream
- 1 cup coconut milk
- 1 ½ cup desiccated coconut
- ½ cup coconut flour
- 2 tsp baking powder
- ¼ cup melted coconut oil
- ½ cup honey
Although you need a few more unusual ingredients it is well worth getting them to make this cake (to be honest, you can’t go wrong with coconut produce).
The recipe is really easy, just measure it all out, bung it in a bowl and mix it up.
So easy a kid can do it (as Sproglet proved).
We used a paper case to line a 2 pint loaf tin.
Pour the mixture in and tap the tin to settle the mixture.
Then pop it in the oven 180 °C (350 °F) for 30 minutes.
Check it and pop it back for another 15 minutes.
It is perfect to do with kids and the cake is, to say it simply, fabulously moist and tasty.
