Today it was soup day again and as I have just been to the Netherlands my thoughts went to pea soup or “Snert” as us Dutch people call it.
The soup I made is however nothing like the traditional soup but equally tasty.
Serves 6:
- 3 medium sweet potatoes chopped
- 1 can of butter beans
- 2 onion chopped
- 3 sticks of celery chopped
- 4 cups of frozen peas
- 1 box of Quorn bacon chopped
- 1½ liter of stock (I made mine with stock cubes)
Method:
Fry all the veg except the peas lightly in some olive oil.
After a few minutes add the stock and three of the cups of peas.
Simmer this till the veggies are cooked.
Blend the soup till smooth.
Now add the Quorn bacon and the cup of frozen peas and bring the soup back to the boil.
It just takes a few minutes for the peas and bacon to cook.
Have a taste, add seasonings to taste. Now your vegetarian soup is ready.
For the rest of the family I added some smoked sausage for a slightly more traditional soup.
But it shows how easy it can be to cook for both vegetarian and non-vegetarian.
