Yes, I know I haven’t been writing much lately – I have been off visiting the land of Nether.
Of course we ate some delicious foods over there but as it was a holiday I cheated a bit on the cooking malarkey.
But now that I am back home I am back to cooking from scratch again.
So today it was fishcakes.
Although it was supposed to be from a cookbook I ended up doing my own thing (what’s new?).
So this is what you need to make these yummy fishcakes.
Serves 4 (12 Fishcakes):
- 2 cans of butter beans
- 2 cans of tuna (I used tuna in sunflower oil)
- 2 tbsp Thai red curry paste
- 3 spring onions
- Fresh coriander (chopped)
Method:
Chop the spring onion finely, put to one side.
Mash the butter-beans but put a few whole ones aside to add a bit of texture.
Separate the tuna flakes and add these to the mixture, add the Thai curry paste, coriander leaves and the chopped spring onions.
Mix these together well and shape into 12 patties.
Fry them off in a little oil.
These are quite fragile so take care while cooking them.
I served them with a little dressing of lime juice, sesame oil and soy sauce.
