Leeky Cauldron!
What? Where? How?

Calm down – only leeks involved!

My cauldron is still stashed away with my broom somewhere.

However I did pull of a teeny bit of magic in the kitchen today.

Lots of veggies, some Quorn and …no idea what to make.

So I started to put the veggies away in the hope inspiration would strike and it did.

I made one of those stacked dinner thingies.

With tasty ingredients, fresh vegetables, pretty colours and Quorn.

Serves 5-6:

  • 6 medium leeks
  • 2 kg sweet potatoes
  • 1 cup of grated cheese
  • 6 Quorn fillets

For the marinade:

  • 4 tbsp orange juice
  • 4 tbsp sesame blend oil
  • 4 tbsp soy sauce
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander


Mix the ingredients of the marinade together in a shallow dish and add the Quorn fillets.

Leave to marinade for 30 min or so if you have time.

Peel and boil the sweet potatoes.

When soft: mash, add cheese, mix well and season with salt and pepper.

Wash leeks and slice thinly.

Melt some coconut oil (or use olive oil) and stir-fry the leeks till soft. Season.

To dish out, place the leeks on a plate place mash on top and finish it with the sliced Quorn fillets.

    • Quorn is mildly flavoured so it is enhanced by sauces and marinades. It is a mushroom type product but it really doesn’t taste mushroomy. I use it regularly because it is easy but as with all food I feel it is important to eat all sorts of different things. I love cooking with lentils and nuts too.
