Today we had a family favourite.
Peach Pilaff is a dish my dad (!!!) showed me.
Dad never cooked much at all but he made a delicious capucijner dish and this delicious pilaff.
The Sproglet loved this dinner so much he had second helpings.
Serves 5-6:
- 4 large onions, chopped
- A large tin of peaches, rinsed and chopped
- 6 Quorn fillets, chopped
- 2 tubes of tomato puree (yes really!)
- 2 cups of rice
Method:
Boil the rice in salted water.
When soft drain and put aside.
Fry the onions til soft and golden.
Fry the Quorn til light golden season well with salt and pepper.
Add the chopped peaches and the tomato puree.
Cook gently til mixed well and it is hot through.
Add the cooked rice and mix thoroughly.
That’s it.
A very, very easy dinner but so tasty!
