On Friday it was soup night again but this time I had managed to find some reduced veggies in the supermarket.
I got a huge bag of spinach (Hmmm last time I bought reduced veggies it was also spinach. I see a recurring theme!)
So back to the soup… It will be a beautiful green soup, Sproglet decided it was “Wizard of Oz soup”.
Serves 6:
- 600 g of fresh spinach leaves
- 2 sweet potatoes peeled and chopped
- 2 leeks sliced into rings
- 3 sticks of celery finely chopped
- 1 onion, finely chopped
- Some olive or coconut oil
- 4 oxo cubes or similar
- Creme fraiche
Method:
Place all chopped vegetables in the pan with the oil and lightly stir-fry.
Add the spinach and the oxo cubes and top up with water till the spinach is just covered.
Bring to the boil, turn down the heat and simmer until the veggies are just soft.
Blitz the soup with a stick blender or process in a food processor till smooth.
Season to taste.
I added a splash of Maggi to the soup but a small amount of marmite or yeast extract would do.
Serve soup in plates or bowls and drizzle the creme fraiche on top.
Serve it with some nice multi grain bread and some chunks of cheddar (the yellow bricks 😀 )
